Ingredients
1 bag Success® White Rice (20 oz)
1 jar (15 oz.) Classico® Four Cheese Tomato Cream Pasta Sauce
1 package (10 oz.) Frozen chopped spinach, thawed and excess water removed
1 can (14 oz.) Artichoke hearts, drained
1 can (15 oz.) Italian-style diced tomatoes, drained
1/2 cup Milk
2 cups Cooked chicken, chopped (1-2" pieces)
1 cup Mozzarella cheese, shredded
Instructions
  1. Preheat oven to 350°F. Coat a 2-quart baking dish with non-stick cooking spray and set aside.
  2. Prepare rice according to package directions.
  3. In a large bowl combine rice, Pasta sauce, spinach, artichokes, tomatoes, milk and chicken. Pour mixture into prepared dish.
  4. Top with mozzarella cheese and bake for 20 minutes.

I tweaked it some to up the flavor based on the other reviews. I used regular rice cooked in chicken broth with pressed garlic, red pepper and Italian seasoning. I mixed the cheese in with everything on accident but that just made it cheesy good. I added kalamata olives, more pressed garlic, a little garlic salt and kickin' chicken seasoning to the mix. Added more cheese to the top before baking. My family liked it and I'll be making it again.

Very easy and tasty weeknight recipe. I made 2 cups of white rice from bulk rice. Everything went together perfectly!

This recipe turned out great!! I did add some herbs and spices to my chicken. Also instead mixing everything in a bowl, I mixed everything on the stove on low heat and then placed it in a casserole dish. My family really loved this dish!
