Spinach and Mozzarella Fritters

These light and fluffy fritters are bursting with flavor. Delicious served as an appetizer, an afterschool snack or a light meal.

  • 1 jar (15 oz.) Classico® Light Creamy Alfredo Pasta Sauce
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 2 eggs
  • 2 boxes (10 oz.) frozen chopped spinach, thawed and excess liquid removed
  • 2 cups shredded Mozzarella cheese
  • 3 cups vegetable oil


  1. Heat oil in a 3 qt. heavy saucepot over medium high heat to 350 degrees F.
  2. In a medium bowl, mix together flour, baking powder, salt and paprika. In another medium bowl, whisk together eggs and Pasta Sauce until smooth. Pour into flour mixture and mix well. Stir in spinach and cheese.
  3. Drop 2 Tbsp. of batter into hot oil for each fritter and fry for 2-1/2 to 3 minutes, or until crispy and golden brown. Fry 6 to 8 fritters at a time to avoid overcrowding the oil. Drain on paper towels. Garnish with grated Parmesan cheese if desired.
